                           Cucumber Cool Down

 Amount  Measure       Ingredient -- Preparation Method

  2      C             Plain Low-Fat Yogurt
  1      C             Finely Chopped Cucumber -- Peeled If Desired
  2      Tbsp          Chopped Fresh Mint Or Parsley (Or)
  1      Tbsp          Dried Mint Or Parsley

In a small mixing bowl, combine all of the ingredients. Cover and chill
until ready to serve.

NOTE: This is a comforting companion to almost any highly spiced dish.
Spoon it over the top or serve it on the side.
