MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Louisiana Epicure's Sauce
Categories: Creole, Fish, Sauces, Chilies, Condiments
     Yield: 48 servings

     2 qt Heavy cream; whipped
     2 c  Mayonnaise
     1 c  Tomato sauce
   1/2 c  Dijon mustard
   1/2 c  Prepared horseradish
     2 tb Sugar
     1 ts Cayenne pepper

 Combine all ingredients; store in refrigerator until ready to use.
 Just before serving fish, spread 1/4 cup sauce on each fillet;
 pass under broiler.
