MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Fresh Marinara Sauce

     Yield: 7 servings

     3 lh Carrots; fine chopped
     2 lg Onions; chopped
     6 cl Garlic; minced
   1/3 c  Olive oil
    15 md Tomatoes (6 lb); peeled,
          - chopped
   1/3 c  Fresh basil; chopped -OR-
     2 tb Dried basil
     3 tb Fresh oregano; chopped -OR-
     1 tb Dried oregano
 1 1/2 ts Salt
   1/4 ts Pepper
     7 c  Cooked penne or bow tie
          - pasta; to serve

 In a Dutch oven, saute the carrots, onions and garlic in
 oil until tender. Add tomatoes and seasonings; bring to
 a boil. Reduce heat; simmer, uncovered, for 1 to 1-1/2
 hours or until thickened and reduced by half, stirring
 occasionally. Serve with pasta.

 UDD NOTES: Doubles nicely in my big stock pot. Freezes
 well. Add cooked, crumbled Italian sausage (sweet or
 zippy) and a half cup of mashed sweet potatoes to make
 a real meal.
