                             Marinara Sauce

 96      oz            Tomatoes peeled in juice
                       - (6 cans) -- coarsely crushed
    1/3  c             Salad oil
  6      cl            Garlic -- pressed or minced
  3                    Onion -- chopped
  4                    Carrot -- finely chopped
  2      tb            Basil -- dried
  1      tb            Oregano -- dried
  2      ts            Salt
  1      ts            Pepper

Heat oil in a 5 qt or larger pot over medium heat. Cook garlic,
onions, and carrots, stirring occasionally, until soft. Stir in
tomatoes and juice, basil, oregano, salt, and pepper. Bring to a
boil. Reduce heat and simmer rapidly, uncovered, stirring
occasionally, for about 1-1/2 hours or until sauce is very thick and
reduced by about half.

Notes: Use as base for Spaghetti Meat Sauce, Pizza Sauce, Lasagne,
Cioppino, or Manicotti Sauce.
