3 c Dried pears -OR-
3 c Dried apricots
1/2 c Maple syrup
1 c Water
1 ds Salt
2 c Heavy cream; or yogurt
Cook the dried fruit, syrupt, and water together in a heavy saucepan.
Simmer, uncovered, over very low heat until soft. Add salt. Puree in
a blender until smooth. Cool completely.
Whip the cream until fairly stiff. Fold the two together gently. Chill
completely.
Optional: Fold in or ganish with fresh fruit before serving.
