MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Celery Sauce
Categories: Sauces
     Yield: 1 Batch

     2 bn Celery
          Salt; to taste
          Sugar; in about the same
          -amount
          White pepper; to taste
     2 oz Butter
     2 oz Flour
   1/2 pt Milk or cream

 Sliced celery thin, put into a saucepan with equal quantities of
 sugar and salt, a dust of white pepper, and butter. Stew your celery
 slowly until it becomes pulpy, but not brown, add flour and milk or
 cream. Let it simmer 20 minutes, then rub the mixture through a sieve.

 For boiled pheasant, or turkey.
