MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Cottage Cheese Alfredo Sauce

     Yield: 6 Servings

     3 tb Butter
   1/2 c  Shallots; fine chopped
     5 cl Garlic; minced
     2 c  Heavy whipping cream
 1 1/4 c  Cottage cheese
     1 c  Parmesan cheese; grated,
          - divided
   1/4 ts Salt
   1/4 ts Pepper
    16 oz Linguine
          Fresh parsley; chopped
          - (optional)

 In a large saucepan, heat butter over medium heat. Add shallots;
 cook and stir until tender, 2 to 3 minutes. Add garlic; cook
 1 minute longer. Add cream; cook and stir until heated through.
 Stir in cottage cheese, 1/2 cup Parmesan cheese, salt, and pepper;
 bring to a boil, stirring constantly. Reduce heat; simmer,
 uncovered, until thickened, about 10 minutes, whisking
 occasionally.

 Meanwhile, cook pasta according to package directions. Drain;
 transfer to a large bowl. Add sauce; toss to coat. Serve with the
 remaining 1/2 cup Parmesan cheese and if desired, top with
 parsley.
