5 c Diced tomatoes
1 c Uncooked pumpkin seeds
1 Whole large elephant garlic;
-quartered
1 bn Cilantro; leaves only
3 Limes; juice only
4 Jalapenos; remove seeds and
-chop
1 sm White onion; quartered
3 bn Green onions; chopped
Add pumpkin seeds and lime juice to blender and blend into a milky
mixture. Add 2 c tomatoes and the rest of the ingredients, and blend
until smooth. Pour about half the salsa into a bowl, to make room in
the blender for the rest of the tomatoes. Add the rest of the
tomatoes and blend until smooth. Pour the rest of the salsa into the
bowl, stir it together, and let sit for a few minutes.
