3 md Tomatoes -- peeled and chopped
1/2 c Onion -- finely chopped
1 lg Green pepper -- chopped
1 Jalapeno -- seeded and chopped
2 tb Cilantro -- snipped -OR-
2 tb Parsley -- snipped
1/4 ts Salt
In a small mixing bowl, stir together the tomatoes, onion, green
pepper, jalapeno, cilantro or parsley, and salt. Cover and
refrigerate for several hours or overnight.
Makes 1 3/4 cups.

Fajitas are great for no-hassle summer entertaining. It's easy to
have everything prepped and ready to go - all you have to do is at
the last minutes is cook the meat (and peppers). Serve some tortilla
chips with bean dip and some crudites as appetizers, have plenty of
cold beer, soda and juice available, and offer a cold fruity dessert.
