1 lb Green tomatoes;
- peeled, seeded, chopped
1/4 c Onion; chopped
2 Scallions; chopped
1 sm Fresh hot chile; up to 2,
- seeded, minced (optional)
2 ts Fresh lime juice
1/4 ts Salt
1/4 c Fresh cilantro; minced
Combine all of the ingredients in a medium-size bowl.
Cover and let stand at room temperature for 1 hour before serving. If
not using right away, store in the refrigerator, tightly covered,
where it will keep for up to 5 days. Bring back to room temperature
before serving.
