2 tb sunflower oil
2 onions, peeled and sliced
1 lb fresh cranberries
4 oz granulated sugar
Heat the oil in a large pan and add the onions. Cook for 5-8 minutes
or until soft and just brown.
Add the cranberries and sugar and heat gently to dissolve the sugar.
Cover and simmer for 20-30 minutes or until the cranberries are very
tender and the juices syrupy. Chill and serve cold.
