MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Apple Tapioca
Categories: Apples, Puddings
     Yield: 1 Batch

   1/2 c  Quick-cooking tapioca
     2 c  Water; boiling
   1/2 c  Sugar
   1/2 ts Cinnamon
   1/2 ts Salt
     1    Lemon; juice of
     6 c  Tart apples; sliced

 Add the boiling water to the tapioca and cook in a double boiler for
 15 minutes, or until the tapioca is clear. Add the sugar, cinnamon,
 salt, and lemon juice. Arrange the apples in a greased shallow baking
 dish and pour the tapioca mixture over them. Bake in a moderate
 (350 F) oven until the apples are tender and the top is lightly
 browned. Serve hot or cold with plain or whipped cream.
