     Title: Roasted Garlic And Lemon Marmalade

     Yield: 1 Cup

     2    Garlic heads
     1 tb Olive oil
   1/3 c  Water
     2    Lemons; juice and
          - grated zest of
   1/2 c  Natural sugar
   1/3 ts Salt
   1/8 ts Black pepper; freshly ground

 Preheat the oven to 375 F. Place the garlic in a shallow baing pan
 and drizzle with the olive oil. Add the water to the pan and cover
 tightly with aluminum foil. Bake until the garlic is soft, about 1
 hour. Allow to cool.

 Squeeze the garlic cloves from their skins into a medium-sized
 saucepan, mashing them slightly. Add the remaining ingredients,
 cover, and cook over low heat until the mixture cools down and
 becomes syrupy, about 20 minutes. Stir occasionally to make sure it
 doesn't stick to the bottom of the pan.

 Taste and adjust the seasonings. Let cool to room tempeature, then
 refrigerate in a tightly sealed container until ready to use. This
 marmalade will keep well for up to 5 days. Serve at room temperature.
