6 lg Garlic cloves
1 ts Salt
1/4 c Olive oil
3/8 c Red wine vinegar
2 ts Fresh thyme, minced
2 ts Chili sauce
Fresh pepper, to taste
*Heaping teaspoons.
Mash garlic and salt to a paste with a mortar and
pestle. Combine with other ingredients. Let mixture
stand a few hours or overnight in the refrigerator to
blend flavors. Stir before using.
