MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Lemon Curd

     Yield: 2 servings

     2 lg Eggs
          +=PLUS=+
     2 lg Egg yolks
   3/4 c  Caster Sugar
   100 g  Butter; in small cubes
   1/2 c  Lemon Juice
          Zest of 1 Lemon; finely
          - grated

 Whisk Eggs and extra egg yolk with Sugar in a saucepan
 until smooth. Add butter, lemon juice and finely grated
 zest, and whisk over low heat until the mixture
 thickens.

 Transfer to sterilised jars and store in the fridge.
