            Ketchup Au Fruits (Fruit Ketchup)--Quebec Style

 20      Lg            Red Tomatoes--Skins Removed -- Chopped Lg Chunks
  4      Lg            Apples--Peeled -- Chopped Small Pcs
  4      Lg            Pears--Peeled And Cored -- Chopped Lg Chunks
  5      Lg            Peaches--Skins Removed -- Chopped Lg Chunks
  3 1/4  Cups          Granulated Sugar
  2 1/2  Cups          White Vinegar
  4      Lg            Onions -- Coarsely Chopped
  2      Tbsp          Pickling Salt
  2      Lg            Green Peppers -- Coarsely Chopped
  1      Lg            Red Pepper -- Coarsely Chopped
    3/4  Head          Celery -- Coarsely Chopped
  2      Tbsp          Pickling Spice--Unnecessary To Put In Bag

Simmer all ingredients approximately 2 - 2 1/2 hours on low/medium heat or
until desired consistency.  Yield:  Approximately 7 Qts.

Sherilyn's Notes:  If fruits are overly ripe, cook celery, peppers, onions
and apples at least 30 minutes ahead of adding ripened fruit.  Then add
ripe peaches, pears and tomatoes.   OR, if using under ripe peaches and
pears this also works well.  If using under ripe fruit, everything can be
combined initially.  Because I like a thicker type pickle and I increased
the amount of fruit in this recipe from the original recipe.  The original
recipe as it was given to me is below.

ORIGINAL RECIPE FROM TERESA MOMY:  15 tomatoes, 3 apples, 3 pears, 3
peaches, 3 cups sugar, 2 1/2 cups vinegar, 3 onions, 1 1/2 tbsp pickling
salt, 1 green pepper, 1/2 head celery and 1 tsp pickling spice.  Simmer 2 -
2 1/2 hours.  Yield:   4 1/2 - 5 Qts
