Cajun Spice Mix

 1/4 c  Salt
   2 tb Cayenne pepper
   2 tb Paprika
1 1/2 tb Onion powder
   1 tb Freshly ground black pepper
   1 tb Freshly ground white pepper
   1 tb Garlic powder
   2 ts Dried basil
   1 ts Chili powder
 1/4 ts Dried thyme
 1/4 ts Ground mustard
 1/8 ts Ground cloves

Essential to most Cajun dishes, this lively blend of spices can be
used in place of salt.

Combine all ingredients in a small jar. The spice mix can be stored
in a tightly covered glass jar in a cool dry place out of direct
light for up to 4 months.

Yield: 3/4 Cup
