1/4 c Honey
3/4 ts Crushed red pepper flakes
3 c Whole almonds
3 tb Sugar

3 tb White sugar

1/4 c Honey
1 c Whole almonds
1 c Pecans
1 c Dry roasted peanuts
3 tb White sugar
1 1/2 ts Sambar powder
1/2 ts Hot madras curry powder
1 ts Salt
For all versions:
Preheat oven to 325 (convection will show 300)
In a LARGE bowl combine sugar, salt, and the other spices (follow
above ingred. for your recipe-no red pepper flakes in the Indian
version. Mix well. Set aside.
Warm honey and crushed red pepper flakes (if in that recipe) over
medium heat for one minute. For Indian verion, just warm honey.
Stir almonds into the frypan. Make sure all of the nuts are equally
covered in honey. Remove from heat and spread almonds (or mixture of
nuts) in a single layer on to a teflon alum. foil wrapped pan. Bake
for 18 minutes, remove from oven and let cool for two minutes.
(Mixture is still slightly sticky)
Using spatula place the nuts into the bowl with the sugar, etc and
toss carefully to make sure all of the nuts are getting a coating.
Remove the coated nuts and place on a parchment lined cookie sheet
until the nuts are cooled.
I vaccum seal in jars to keep freshness, but can just be placed into
any container for short term use.
Tested for Xmas 2015. Labled the flavor of each jar and made a cloth
covering for the mason jar and tied with ribbon.
Fun gift. You have to know the hotness level of the people that
will get this as part of a xmas gift.
