Title: Beer and Edam Spread

2 Whole Edam rounds (7 oz ea)
1 c Sour cream
1/4 c Beer
2 tb Chives; very finely snipped
Cut a circle from top of each cheese, about 1/2" in from sides.
Scallop the edges for an elegant presentation, discard removed wax.
Scoop out cheese, leaving approximately a 1/2" shell combine
cheese, sour cream, beer, and chives in a food processor. Process
until smooth. Spoon back into shells. Cover and chill for 2 hours.
Serve slightly chilled or at room temperature.
