     Title: Whipped Ricotta With Herbs

     Yield: 8 Servings

    15 oz Whole-milk ricotta cheese
   1/2 ts Kosher salt
          Extra virgin olive oil
          Fresh herbs (such as
          - parsley, basil, thyme,
          - and/or dill); chopped
          Flaky sea salt
          Cracked black pepper or
          - crushed red pepper
          Lemon zest
          Baguette slices; toasted

 Preparation time: 10 minutes

 Place ricotta cheese and kosher salt in a food processor. Process
 until whipped and very creamy, 1 to 2 minutes. Spoon into a shallow
 dish. Drizzle with olive oil and sprinkle with herbs, flaky salt,
 pepper, and lemon zest. Serve immediately with toasted baguette
 slices.
