2 1/4 lb Carrots -- grated
1 c Coconut -- grated
1 tb Coriander -- chopped
4 Green chiles -- seeded, chopped
Salt -- to taste
2 tb Oil
1 Curry sprig
1/2 c Water
1 ts Mustard seeds
1 sm Onion -- chopped
Make a masala from the coconut, coriander leaves, and chopped seeded
chillies by chopping it all together and processing it in a food
processor or blender. Add the grated carrots to the masala and mix
well.
Heat 1 tb oil. Add the carrot mixture, curry leaves, and water and
cook until dry. Heat the remaining oil in another pan and fry the
mustard seeds. Add the onion and fry until golden. Add the carrot
mixture and fry for about 10 minutes.
Use for filling for sandwiches, samosas, and tartlets.
