31 oz Black beans (2 cans) -- drained,
- rinsed, mashed
1/2 c Tomato -- chopped
1/2 c Cucumber -- chopped
1/3 c Ripe olives -- sliced
1/4 c Green onions -- chopped
1 tb Olive oil
1 ts Greek seasoning
4 oz Tomato-basil feta cheese --
- crumbled
Spread beans in a shallow 9" dish. Combine tomato and next
5 ingredients and toss gently. Sprinkle tomato mixture over beans.
Top with crumbled feta cheese. Cover and chill thoroughly.
