                           Cheese Pepper Dip

 24      ounces        Cacique(R) brand Asadero cheese
  6                    pasilla chilies -- roasted and peeled
  2      tablespoons   garlic -- minced
    1/2  cup           cilantro -- chopped
  6                    red or green bell peppers -- roasted and peeled
                       salt and pepper -- to taste
                       tortilla chips -- OR
                       fresh corn tortillas

Slice the chilies and the bell peppers into thin strips. Slowly melt
the Asadero cheese over low flame and add the chilies, garlic, and
cilantro and stir with a wooden spoon. Add salt and pepper and serve
with the tortillas (chips or fresh corn tortillas).
