1 1/2 lb Boneless chicken breast
-(one large breast half)
1/4 ts Ground pepper
3/4 ts Salt
1 1/2 c Panko bread crumbs

1/4 c Mayo
6 tb Crystals - or your choice
1/4 ts Cayenne pepper
1/8 ts Salt

1/2 c Blue cheese dressing
Pour Panko into a shallow dish and toss with salt and pepper.
Cut chicken breasts into finger length strips (or use chicken
tenders).
For Marinade, whisk 1/4 c mayo, hot sauce, cayenne and 1/8 ts salt
together.
Add chicken and toss with your hands to coat chicken well. Can
refrigerate for several hours - a couple of hours or not at all.
Place each piece of chicken in the Panko mixture - pressing the Panko
well onto all sides.
Cover baking pan with non stick foil. Arrange each chicken strip in a
single layer on the baking sheet. Refrigerate for at least 10
minutes.
Preheat broiler for at least 10 minutes. Place rack 6 inches from
broiler element.
Broil chicken strips, turning once, until they are crisp and golden
brown in spots on the outside and cooked through. 6 - 8 minutes per
side. Rotate pan as needed.
Place on serving platter.
Spread some blue cheese dressing on each chicken finger instead of
dipping into the blue cheese dressing as usual with buffalo wings.

Tested 10/08. Very surprised, actually tasted like buffalo wings.
Not the same crunch, but good mouth feel and hotness.
Made again with marinating 2 hours. 2/13/11. More flavor, but can be
done without long marinating.

often.
