3 Eggs
4 tb Shallots; chopped
1 bn Fresh basil; chopped
3 sm Lemons; juice of
1 1/4 oz Old Bay Seasoning
1/2 lb Butter; melted
1 ts White pepper
1 Box potato pancake mix
3 lb Lump crabmeat; checked for
- shells
Beat eggs with shallots, basil, lemon juice, Old Bay seasoning,
white pepper, and melted butter. Mix in potato pancake mix and let
stand for 15 minutes. Gently fold in lump crabmeat. Mix well. Form
into 16 crab cakes. Grill cakes in a lightly oiled skillet until
browned on both sides.
