3 lb eye of round roast
1 ea mango
48 ea walnut halves
place eye of round onto a rack in a roasting pan
roast @ 325 degrees for 60 minutes, or to desired doneness remove from
oven wrap in plastic
and chill thoroughly
cut slices to a thickness of 1/4-inch
garnish each with a slice of mango and a walnut half
serve slightly chilled or at room temperature
