8 oz Pkg cream cheese -- softened
1 1/4 c Parmesan cheese -- grated, divided (5 oz)
2 cans Refrigerated cresent dinner rolls -- (8 oz ea)
1 c Red bell pepper -- chopped
1/4 c Fresh parsley -- chopped
Mix cream cheese and 1 cup parmesan cheese with electric mixer on
medium speed until well blended. Separate cresent rolls into 8
rectangles; seal perforations. Spread 3 tb cream cheese mixture on
each rectangle; top with red pepper and parsley. Fold long end up
over filling to center; fold up again to enclose remaining filling.
Cut each into equal size squares. Place, seam-side down, on cookie
sheet. Sprinkle with remaining parmesan cheese. Bake at 350 F for
13 to 15 minutes or until golden brown.
Makes 32 bites.
Variation: Substitute pepperoni and oregano for red bell peppers and
fresh parsley.
