2 tb Olive oil
1 ts White wine vinegar
2 cl Garlic -- peeled and crushed
16 oz Plain yogurt -- should be thick
1 md Cucumber -- peeled and diced
2 tb Fresh mint -- chopped
Salt
Place oil, vinegar, and garlic in a bowl and beat lightly with a
fork. Add yogurt and salt and continue to beat lightly until well
blended. Mix in the cucumber and the mint and lightly chill before
serving.
This recipe came from my husband's grandfather who was a Greek
immigrant. The amounts can obviously be modified to suit your taste.
