     8 oz Cream cheese; softened
     1 ts Grated orange rind
     2 tb Orange juice
   1/2 ts Ground ginger
    48    Multi-shaped crackers
          Lightly toasted
   1/4 md Honeydew melon
     8    Fresh strawberries
     1    Or
     2    Kiwifruit
 1 1/2 c  Fresh pineapple wedges;
          -drained
   3/4 c  Seedless red grapes
   3/4 c  Seedless green grapes
   1/2 c  Mandarin orange sections
          Drained
   1/2 c  Fresh blueberries
     1 sm Fresh mint leaves

 This recipe suggests particular fruits to adorn the simple
 cracker bases, but other fresh fruits, as well as steamed
 asparagus pieces, broccoli flowerets, and carrot slices
 could be substituted. Beat cream cheese at medium speed of
 an electric mixer until smooth; add orange rind, orange
 juice, and ground ginger, mixing well.  Spoon mixture into
 a decorating bag fitted with tip No. 18, and pipe mixture
 onto crackers; set aside.  Cut fruit into various shapes,
 and decorate crackers as desired with fruit and mint
 leaves.  Yield:  4 dozen.
