                         Cambozola Pita Pizzas

  4      Whole         Cooking Onions -- Thinly Sliced
  2      Tbsp          Butter
  1      Tbsp          Or 2 Tbsp. Brown Sugar
  4      Tsp           Balsamic Vinegar Or Water
                       Salt And Pepper -- To Taste
  1 1/2  Pkg           Mini Pita Rounds, Halved Horizontally
  8      Oz            Cambozola Cheese -- Crumbled
                       Sun Dried Tomatoes -- Slivered

Preheat oven to 300 degrees.
Spread onions in a shallow baking dish.
Dot with butter; sprinkle with brown sugar, balsamic vinegar, salt and pepper.
Bake, covered for 30 to 40 minutes, stirring once.  (You may cook these a day
or two in advance and store them in the refrigerator.)
Near serving time, place pita halves on baking sheets.
Top each pita half with a spoonful of onions, Cambozola and 2 or 4 slivers of
sun dried tomatoes.
Preheat oven to 375 degrees just before serving time, bake 6 to 8 minutes until
light brown and bubbly.
