  1      pound         chicken breasts or thighs, deboned &
                       skinned
                       <Marinade>
  1      teaspoon      ginger root, grated
  1      clove         garlic, minced
  1      teaspoon      curry powder
                       salt
                       pepper
  1      teaspoon      peanut oil
                       PEANUT SAUCE
                       THAI CUCUMBER SALAD

1.  Cut chicken into strips.

2.  Combine marinade ingredients. Add chicken and chill covered for 30
minutes or more.

3.  Soak bamboo skewers in water for at least 30 minutes. Thread chicken onto s
kewers.

4.  Grill chicken until golden brown. Serve with Peanut Sauce & Thai
Cucumber Salad (see recipes).
