                        Artichoke Cheese Squares

  2      tb            Olive oil
    1/3  c             Onion -- minced
  2      cl            Garlic -- up to 3, minced
  4                    Eggs
  1      oz            Can artichoke hearts (14) --
                       - drained, trimmed, and chopped
    1/4  c             Dry bread crumbs
    1/2  lb            Swiss or sharp Cheddar cheese
  2      ts            Dry parsley -OR-
  2      tb            Fresh parsley -- minced
    1/4  ts            Oregano
    1/2  ts            Salt
                       Pepper -- to taste
  1      ds            Tabasco (optional)

Heat oil in skillet, and saute onion and garlic until soft and
translucent but not brown.

Beat eggs in bowl; add chopped artichoke hearts. Stir in rest of
ingredients.

Pour into 7x11" baking dish. Bake 25 to 30 minutes at 325 F until
set. Let cool before cutting into squares.
