4 c Sugar
3/4 c Water, cold
3 Egg whites
1/2 c Roasted peanuts (pecans)
1 c Light corn syrup
1/4 ts Salt
1 ts Vanilla
Mix together sugar, corn syrup, water, and salt in a 1-1/2 quart
casserole dish. Cook in microwave for 22 minutes or until hard
ball stage. Stir once or twice while cooking. Beat egg whites until
stiff in very large mixing bowl. Pour hot mixture into beaten egg
whites and beat about 12 minutes. Fold in nuts and vanilla.
