There are 3 kinds of summer squash:

1. Yellow Squash.  There are 2 types: the crookneck and the slightly
  plumper straightneck.  Both are sunny yellow outside, pale and
  succulent inside.  About 2 - 4 pounds.
2. Pattypan.  Flat, round, pale green squash with scalloped edges.
  They can be small as a biscuit or big as a pie.
3. Zucchini.  This isn't one squash but four, all green skinned and
  white-fleshed.

To prepare for cooking:

Yellow squash and zucchini:  Cut off ends and scrub well; peel only if
skins are old.  If young and tender leave whole; otherwise cut in 1/2:
slices or halve and seed.

Pattypan: Wash in cool water, peel, seed, and cut in 1/2" cubes.
