I keep a large bag full of garlic in a cool dark place and another
portion I peel and put into a jar of oil and keep in the fridge,
makes great flavored oil. But you can either peel and freeze or my
dad froze the whole, but they will look a bit opaque when you defrost
them, but have same flavor, and I cook with them all the time.
