16 frozen hamburger patties
4 tablespoons freshly ground pepper
salt
butter
Tabasco sauce -- few dashes
Worcestershire sauce -- few dashes
lemon juice -- few dashes
4 tablespoons cognac
parsley
chives
Remove hamburger patties from freezer. Let them defrost as long as
possible, but be sure to take this into account when cooking (will
defrost completely in about 2 hours at room temperature). Sprinkle
freshly ground pepper over all of them, on both sides. Press pepper in
with heel of your hand. Let stand. When ready to serve, sprinkle bottom
of heavy skillet with a light layer of salt. Turn heat to high and when
salt begins to brown slightly, add hamburgers. Cook until well browned
on one side, turn and cook over low flame 8 to 12 minutes or until
cooked to desired degree. Place 2 tsp of butter on each patty. Add
Tabasco, Worcestershire sauce and lemon juice. Turn heat very low,
blaze with cognac. Place patties on serving platter and pour sauce over
them. Sprinkle with parsley and chives.
