Roast Beef in Cumberland Sauce

20 oz Currant jelly (2 jars)
2 Egg yolks
1/2 c Raisins
4 tb Vinegar
4 tb Sugar
1 1/2 ts Dry mustard
Salt and pepper -- to taste
1 1/2 c Roast beef -- up to 2 c, cold
Over hot water, stir currant jelly until soft. Beat in egg yolks,
raisins, vinegar, sugar, dry mustard, salt, and pepper.
Stir the sauce, occasionally, until it thickens, about 15 minutes.
Pour over cold roast beef.
If desired, return the beef and the sauce to the double boiler or
freeze in sauce.
To Serve:
Defrost and reheat in double boiler.
