    1/2  c             Olive oil
  4                    Green peppers -- minced
  4                    Eggplants -- pared and cut in
                       - 1" dice
  2      cl            Garlic -- sliced
  2      lg            Onions -- minced
 32      oz            Spanish style tomato sauce
  4      ts            Salt
  1 1/2  ts            Freshly ground pepper
  2      ts            Brown sugar
    3/4  c             Parmesan cheese -- grated
  3      lb            Ground chuck -- browned
                       - (optional)

Heat olive oil in skillet. Stir in green peppers, eggplants, garlic,
and onions. Cook over low heat until they begin to brown. Stir in
tomato sauce, salt, ground pepper, and brown sugar. Cook slowly until
eggplant is tender. Chill quickly and freeze in portions suitable for
your family.

To Serve:

Defrost and add 1/4 cup grated parmesan cheese for every 4 servings.
Heat through for about 15 minutes.

You may make a main dish out of this by adding 1 lb ground chuck,
browned, per 4 servings.
