MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Pulled Pork Sliders

     Yield: 20 Servings

     1 lg Onion; quartered
     4 lb Boneless pork butt
     2    Chipotles in adobo;
          - fine chopped; plus:
     3 tb Adobo sauce
   3/4 c  Honey barbecue sauce
   1/4 c  Water
     4 cl Garlic; minced
     1 tb Ground cumin
     1 ts Salt
   1/4 ts Pepper
    20    Hawaiian sweet rolls; split,
          - toasted

     2 c  Red cabbage; fine chopped
     1 md Mango; peeled, chopped
     1 c  Pineapple tidbits; drained
   3/4 c  Fresh cilantro; chopped
     1 tb Lime juice
   1/4 ts Salt
   1/8 ts Pepper

 Place onion in a 5 qt slow cooker. Cut roast in half; place over
 onion. In a small bowl, combine chipotle peppers, adobo sauce,
 barbecue sauce, water, garlic, cumin, salt, and pepper; pour over
 meat. Cook, covered, on low 8 to 10 hours or until meat is tender.

 Remove roast; discard onions. Cool slightly; skim fat from cooking
 juices. Shred pork with 2 forks. Return pork to slow cooker; heat
 through.

 For coleslaw, in a large bowl, combine cabbage, mango, pineapple,
 cilantro, lime juice, salt, and pepper. Place 1/4 cup pork mixture
 on each roll bottom; top with 2 tb coleslaw. Replace tops.
