Title: Mushroom & Onion Grilled Cheese Sandwiches

Yield: 4 Servings
3 tb Butter; softened, divided
8 oz Baby portobello mushrooms;
- sliced
1 sm Onion; halved, thin sliced
8 sl Cheddar cheese; thin
8 sl Texas toast
4 sl Bacon; cooked, crumbled
In a large nonstick skillet, heat 1 tb butter over medium-high
heat. Add mushrooms and onion; cook and stir 4 to 5 minutes or
until tender. Remove from pan. Wipe skillet clean.
Place 1 slice cheese on each of 4 bread slices. Top with mushroom
mixture, bacon, and the remaining cheese and bread. Lightly spread
outsides of sandwiches with remaining butter.
In same skillet, toast sandwiches in batches over medium heat 45 to
60 seconds on each side or until golden brown and cheese is melted.
