     Title: Julius Dithers Ball Buster Hoagy/Sub/Grinder

MMMMM-------------------------MEATBALLS------------------------------
     2 lb Hot Italian sausage
   1/2 c  Bread crumbs
   1/2 c  Green onions; thin sliced
     4 tb Parmesan or Asiago; grated
     2 lg Eggs

MMMMM---------------------------SAUCE--------------------------------
     2 tb Extra-virgin olive oil
     4 cl Garlic; crushed and chopped
   1/2 ts Crushed red pepper flakes
     2 tb Flat-leaf parsley; chopped
   1/2 ts Dried oregano
    28 oz Can crushed tomatoes
    14 oz Can chunky style crushed
          - tomatoes
          Salt & fresh ground pepper

MMMMM--------------------------ASSEMBLY-------------------------------
     4    Semolina crusty sub rolls;
          - sesame seeds optional
 2 1/2 c  Shredded Provolone or
          - Italian 4-cheese blend
          Sweet basil or arugula
          - leaves; shredded, garnish

 Meatballs:

 In medium bowl, add sausage, bread crumbs, onions, cheese, and egg.
 Mix thoroughly. Shape into 24 meatballs.

 Cook over medium-low heat, turning frequently, until brown.

 5 Minute Marinara:

 Heat a medium saucepan over medium heat. Add oil and garlic. When
 garlic starts sizzling, add herbs and crushed pepper. Allow oil to
 infuse for half a minute, then stir in the tomatoes and season
 sauce with salt and pepper. Bring sauce to a bubble, reduce heat,
 and simmer until meatballs are ready.

 Assembly:

 Combine meatballs and sauce and pile into sub rolls, 6 meatballs
 per sub. Top with shredded cheese and place under subs under
 broiler to melt cheese.
