     Title: Shrimp Patty Sandwiches

     Yield: 8 Servings

     4 lg Eggs
    24 oz Shrimp (4 cans); rinsed,
          - drained -OR-
     2 c  Peeled, deveined cooked U-40
          - shrimp
   1/2 lb Haddock; cooked, flaked
 1 1/2 c  Pancake mix
     2 tb Corn meal
   1/2 ts Dried parsley flakes
   1/2 ts Celery salt
   1/4 ts Ground mustard
   1/4 ts Paprika
   1/2 c  Dry bread crumbs
     3 tb Canola oil; up to 4 tb
     8    Hamburger buns

MMMMM--------------------------OPTIONAL-------------------------------
          Lettuce leaves
          Tomato slices
          Onion slices
          Sriracha
          Mayonnaise

 In a large bowl, beat the eggs. Add the next 8 ingredients; mix
 well. Shape into 8 patties. Coat with bread crumbs.

 In a large cast-iron or other heavy skillet, cook patties in oil
 over medium-high heat until golden brown, about 2 minutes on each
 side. Serve on hamburger buns.  Top with lettuce, tomato, onion,
 and mayonnaise as desired.
