     Title: Portobello-Gouda Grilled Sandwiches

     Yield: 2 servings

     1 c  Baby portobello mushrooms;
          - sliced
     1 tb Butter; +4 ts, divided
     4 oz Smoked Gouda cheese; sliced
     4 sl Rye bread
     1    Plum tomato; sliced

 In a large skillet, saute mushrooms in 1 tb butter until tender.
 Place cheese on 2 bread slices; top with mushrooms, tomato, and
 remaining bread. Spread outsides of sandwiches with remaining
 4 ts butter.

 In a small skillet over medium heat, toast sandwiches until cheese
 is melted, 2-3 minutes.
