MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Southern Fried BLT

     Yield: 4 servings

   1/2 c  Corn meal
     3 tb A-P flour
     1 ds Pepper
     2 md Green tomatoes; sliced 1/4"
          Oil; for frying
     8 sl Whole wheat bread; toasted
   1/2 c  Mayonnaise
    12 sl Bacon; cooked
          Iceberg lettuce leaves

 In a shallow bowl, mix corn meal, flour, and pepper. Dip tomato
 slices in corn meal mixture to coat both sides; shake off excess.

 In a large skillet, heat 1/4" of oil until hot. In batches, fry
 tomato slices until browned, 2-3 minutes per side. Drain on paper
 towels.

 To serve, spread each slice of toast with mayonnaise. Layer half of
 the slices with bacon, fried tomatoes, and lettuce; top with
 remaining slices.
