2 c Fresh zucchini; diced
1/2 c Onion; minced
1 Clove garlic; crushed
1/2 ts Basil
1/2 ts Oregano
2 tb Olive oil
Salt and black pepper to
-taste
Fresh tomato slices
1/2 c Parmesan; freshly-grated
Saute onion and garlic, with salt, basil, and oregano, in olive oil
until onion is translucent. Add zucchini and saute until soft.
Spread onto toasted bread, topped with thin slices of tomato and a
sprinkling of fresh parmesan. This sandwich should be broiled, not
grilled. Parmesan loves to broil.
Assemble the sandwiches right before serving. Garnish lavishly with
fruit slices and vegetable sticks.
