    3/4  c             Tomatoes -- diced
    1/2  c             Red pepper -- diced
    1/2  c             Scallions -- chopped
  2      tb            Fresh coriander
  1                    Lime
    1/4  ts            Ground cumin
    1/4  ts            Chili powder
    1/4  ts            Salt
    3/4  c             Black beans
  1      pn            Red pepper flakes
  1 1/2  c             Lettuce -- shredded
  2      tb            Peanuts
  2                    Flour tortillas

Combine tomatoes, red pepper, scallions, coriander, 2 ts lime juice,
lime zest, cumin, chili powder, salt, and red pepper flakes.

Stir in black beans and set aside.

Warm tortillas one at a time in a hot skillet.

Top with shredded lettuce, spoon on tomato mixture and sprinkle with
peanuts.

Per serving: 315 calories
