  4      c             Arugula -- coarsely chopped
  8                    Plum tomatoes -- cored and diced
  4      ts            Fresh lemon juice
  2      ts            Olive oil
  1      ts            Kosher salt
                       Freshly ground black pepper --

Toss the arugula, tomatoes, lemon juice, and olive oil together.
Season with salt and pepper.

Notes: Use on feta herb crust.
