- Pepper Bacon Jam; to taste
Salt; for the boiled water
1/2 lb Elbows or pasta of your
- choice
2 oz White Cheddar; or more
- to taste
2 oz Gouda; or more to taste
2 tb Milk; or as needed
Bring a 2 qt pot of water to a boil. Salt the water generously. Add
the pasta and cook, stirring occasionally, until just tender to the
bite, or al dente. Before draining, pull out 3/4 cup pasta water; set
aside. Drain the pasta and return the pot to the heat.
Heat the butter in the pasta pot, then add the cooked pasta. Stir in
1/2 cup reserved pasta water. Add the Cheddar and stir until smooth.
Add the Gouda, milk, bacon jam, and mix well. Dribble in extra pasta
water as needed to make a soft, creamy sauce. Serve immediately!
