MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: White Cheddar Mac & Cheese

     Yield: 8 servings

    16 oz Small pasta shells
   1/2 c  Butter; in cubes
   1/2 c  A-P flour
   1/2 ts Onion powder
   1/2 ts Ground chipotle pepper
   1/2 ts Pepper
   1/4 ts Salt
     4 c  Milk
     2 c  Sharp white Cheddar cheese;
          - shredded
     2 c  Manchego or additional
          - white Cheddar cheese;
          - shredded

 In a 6 qt stockpot, cook pasta according to package

 directions. Drain; return to pot.

 Meanwhile, in a large saucepan, melt butter over medium heat. Stir
 in flour and seasonings until smooth; gradually whisk in milk.
 Bring to a boil, stirring constantly; cook and stir until
 thickened, 6-8 minutes. Remove from heat; stir in cheeses until
 melted. Add to pasta; toss to coat.
