10 oz Flat noodles or elbow
-macaroni; up to 12 oz
2 Onions; chopped
2 Green peppers; chopped
1 sm Jar tomato sauce -OR-
2 c Home-made sauce
1/2 lb Mushrooms; sliced
1 1/2 c Ricotta cheese
1/2 c Mozarella cheese
1 ts Garlic powder
1 ts Black pepper
1 ts Oregano
A "macaroon," according to the inventor of this pseudo-lasagna dish,
is any rich and hearty pasta guaranteed to satisfy even the most
ravenous hunger. This particular "macaroon" was a favorite on his
7,000 mile cross-continental bicycle tour.
Cook noodles in water, drain, and set aside. Saute onions, mushrooms,
green pepper, and spices in oil. Mix sauteed vegetables, cooked
noodles, and cheeses in a large pot. Stir gently and allow to simmer
10 minutes.
